The Minds Behind the Menu
For this edition, Chef Nick Escobar, bringing his experience from Nobu Fifty-Seven New York, welcomes Chef Will Meyrick, the chef-restaurateur behind Honey & Smoke.
Chef Meyrick has spent more than two decades exploring the food cultures of Southeast Asia, building a portfolio of restaurants that includes Mama San, Hujan Locale, Billy Ho, Buzo and Honey & Smoke. His cooking is shaped by deep research into regional ingredients and traditions, combined with a contemporary, open-fire approach influenced by the culinary cultures of Persia and the Eastern Mediterranean.
